For the Chicken:

1 lb (450g) chicken breast, diced

1/2 cup cornstarch

1/2 cup panko breadcrumbs

1 large egg, beaten

Salt and pepper, to taste

Oil for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust to your heat preference)

1 teaspoon lime juice

A pinch of garlic powder

For the Bowls:

2 cups cooked jasmine rice or quinoa

1 cup shredded carrots

1 cup sliced cucumbers

1 red bell pepper, sliced

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Chicken:

    - Season the diced chicken breast with salt and pepper.
