Bang Bang Chicken Bowls

Ingredients
  

1 lb boneless, skinless chicken breasts

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Vegetable oil, for frying

1 cup cooked jasmine rice

1 cup shredded carrots

1 cup chopped cucumber

1/2 cup edamame, shelled

1/4 cup chopped green onions

1/4 cup fresh cilantro, chopped

1/2 cup Bang Bang sauce (store-bought or homemade)

Instructions
 

Marinate the Chicken: Place the chicken breasts in a bowl and cover with buttermilk. Let it marinate in the fridge for at least 30 minutes or up to overnight for maximum tenderness.

    Prepare the Coating: In a large bowl, combine flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper. Mix well.

      Bread the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture until fully coated. Shake off any excess.

        Fry the Chicken: In a large skillet, heat vegetable oil over medium heat. Once hot, carefully place the breaded chicken pieces into the oil. Fry for about 5-7 minutes on each side, until golden brown and cooked through. Remove and drain on paper towels.

          Prepare the Bowl: In serving bowls, layer the cooked jasmine rice as the base. Top with shredded carrots, chopped cucumber, edamame, and pieces of crispy fried chicken.
