1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup cornstarch

2 eggs, beaten

1 cup panko breadcrumbs

1 cup cooked jasmine rice

1 cucumber, thinly sliced

1 small carrot, julienned

1 red bell pepper, thinly sliced

1 avocado, sliced

3 green onions, finely chopped

Fresh cilantro, for garnish

Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon rice vinegar

Salt and pepper to taste

Prepare the Chicken: In a bowl, season the chicken pieces with salt and pepper. Set up a breading station with three separate bowls: one with cornstarch, one with beaten eggs, and one with panko breadcrumbs.

    Bread the Chicken: Dredge each piece of chicken in cornstarch, shaking off the excess. Dip in the beaten eggs, then coat with panko breadcrumbs. Place the breaded chicken on a plate.

      Cook the Chicken: In a large skillet over medium heat, add enough oil to cover the bottom of the pan. Once heated, carefully add the breaded chicken in batches.
