1 lb boneless, skinless chicken thighs

1 cup cornstarch

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (adjust based on spice preference)

1 cup buttermilk

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (more or less to taste)

4 cups mixed greens (spinach, arugula, or lettuce)

1 cup cooked jasmine rice

1 avocado, sliced

1/2 cup shredded carrots

2 green onions, thinly sliced

Sesame seeds for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the buttermilk and chicken thighs. Allow the chicken to marinate in the refrigerator for at least 30 minutes, or up to 2 hours for better flavor.

    Prepare the Breading: In another bowl, mix the cornstarch, garlic powder, paprika, salt, black pepper, and cayenne pepper.

      Bread the Chicken: Remove the marinated chicken from the refrigerator. Dredge each piece in the cornstarch mixture, coating it evenly. Shake off excess cornstarch.

        Fry the Chicken: Heat a large skillet with 1/4 inch of oil over medium-high heat. Once hot, add the breaded chicken thighs. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

          Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, sweet chili sauce, and sriracha. Adjust the level of sriracha based on your spice preference.
