8 oz (225 g) pasta (like penne or rigatoni)

8 oz (225 g) block of feta cheese

2 cups cherry tomatoes, halved

1/4 cup extra virgin olive oil

4 cloves garlic, minced

1 tsp red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh basil, for garnishing

Zest and juice of 1 lemon

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Baking Dish: In a 9x13 inch baking dish, add the cherry tomatoes, olive oil, minced garlic, red pepper flakes, salt, and pepper. Toss everything together to coat the tomatoes well.

      Add Feta: Create a center well in the mixture and place the block of feta cheese in the middle. Drizzle a small amount of olive oil over the feta and sprinkle with a pinch of salt and pepper.

        Bake: Transfer the dish to the oven and bake for about 30 minutes, or until the tomatoes are blistered and the feta is soft and slightly golden.

          Cook Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions in salted water until al dente. Reserve 1/2 cup of the pasta water, then drain the rest.

            Mix It Up: Once the feta and tomatoes are done baking, remove the dish from the oven. Use a fork to mash the feta and tomatoes together, mixing them into a creamy sauce.

              Combine: Add the cooked pasta to the baking dish, stirring to coat in the feta-tomato sauce. If the mixture is too thick, add reserved pasta water a little at a time until the desired consistency is reached.

                Finish: Stir in the lemon juice, zest, and grated Parmesan (if using). Adjust seasoning with more salt or pepper if needed.
