1 cup ground pork or chicken

2 green onions, finely chopped

1 tablespoon soy sauce

1 teaspoon ginger, minced

1/2 teaspoon chili paste (adjust for spice preference)

For the Soup:

6 cups chicken broth or vegetable broth

2 teaspoons soy sauce

1 tablespoon miso paste (optional)

1 tablespoon sesame oil

1 carrot, julienned

1 bell pepper, sliced

2 cups bok choy or spinach

1 tablespoon fresh cilantro, chopped (for garnish)

Sliced red chili (for garnish, optional)

Make the Dumpling Dough: In a mixing bowl, combine the all-purpose flour and salt. Gradually add the water, mixing until a smooth dough forms. Knead on a floured surface for about 5 minutes. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling: In a separate bowl, mix together the ground pork or chicken, green onions, soy sauce, ginger, garlic, sesame oil, and chili paste until well combined.

      Form the Dumplings: Roll out the rested dough on a floured surface to about 1/8 inch thick. Cut out 3-inch circles using a round cutter or glass. Place a teaspoon of filling in the center of each circle, fold over, and pinch the edges to seal tightly. Repeat until all the dough and filling are used.

        Make the Soup Base: In a large pot, heat the sesame oil over medium heat. Add the carrot and bell pepper, sautéing for about 3-4 minutes until softened. Add the chicken or vegetable broth, soy sauce, and miso paste, bringing it to a gentle simmer.
