Authentic Jamaican Curry Chicken

Ingredients
  

2 lbs chicken pieces (bone-in, skin-on)

3 tablespoons Jamaican curry powder

1 teaspoon allspice (pimento)

2 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1-2 Scotch bonnet peppers (whole or sliced, based on heat preference)

3-4 stalks of green onions, chopped

2 medium carrots, sliced

2 potatoes, diced

1 can (14 oz) coconut milk

1 cup chicken broth

Salt to taste

Fresh cilantro for garnish (optional)

Juice of 1 lime

Instructions
 

Marinate the Chicken: In a large bowl, combine the chicken pieces with the Jamaican curry powder, allspice, and a generous pinch of salt. Squeeze in the lime juice and mix well to coat the chicken evenly. Let it marinate for at least 1 hour (or overnight for deeper flavor).

    Heat Oil: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.

      Brown the Chicken: Add the marinated chicken pieces to the pot and brown on all sides for about 5-7 minutes. This step adds a rich flavor to the dish. Remove the chicken and set it aside.

        Sauté Aromatics: In the same pot, add the chopped onions, garlic, and ginger. Sauté for about 3-4 minutes until the onions become translucent.

          Add Vegetables: Stir in the carrots, potatoes, and green onions, and cook for another 2-3 minutes.

            Build the Curry: Return the browned chicken to the pot. Add the Scotch bonnet peppers, coconut milk, and chicken broth. Stir to combine everything, ensuring the chicken is submerged in the liquid.

              Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 30-40 minutes, or until the chicken is cooked through and tender. Stir occasionally, and adjust the seasoning with more salt if needed.

                Finish & Garnish: Once cooked, remove the Scotch bonnet peppers if you prefer less heat. Garnish with fresh cilantro if desired before serving.

                  Serve: Serve your authentic Jamaican curry chicken over steamed rice or with traditional rice and peas, along with a side of fried plantains for a complete meal.
