Ingredients

1 lb ground beef (80/20 for optimal flavor)

1 tablespoon vegetable oil

2 cloves garlic, minced

1 tablespoon ginger, minced

1 red bell pepper, diced

1 carrot, julienned or shredded

3 green onions, sliced (whites and greens separated)

1/4 cup soy sauce (low sodium recommended)

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (adjust to taste)

1 head of butter or iceberg lettuce (for wraps)

Fresh cilantro leaves, for garnish

Optional: Sriracha or chili sauce, for serving

Instructions

Cook the beef: In a large skillet, heat the vegetable oil over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and cooked through (about 6-8 minutes). Drain excess fat if necessary.

Add aromatics: Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.

Incorporate vegetables: Add the diced red bell pepper, shredded carrot, and the white parts of the green onions. Sauté for about 3-4 minutes until the veggies start to soften.

Flavor the mixture: In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, and red pepper flakes. Pour this sauce over the beef mixture, stirring to combine thoroughly. Let it simmer for another 2-3 minutes to allow the flavors to meld.

Prepare lettuce wraps: While the filling is simmering, gently separate the lettuce leaves, ensuring they remain whole for wrapping. Rinse and dry them thoroughly.

Assemble and serve: Spoon a generous amount of the beef mixture into each lettuce leaf. Top with chopped cilantro and the green parts of the green onions. Serve with Sriracha or chili sauce on the side for added heat.

Enjoy: Fold the lettuce around the beef filling, like a taco, and eat immediately!
