Instructions

Cook the Udon Noodles: In a large pot of boiling salted water, cook the udon noodles according to package instructions, usually about 3-4 minutes. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Sauce: In a small bowl, combine chili oil, minced garlic, soy sauce, rice vinegar, sesame oil, and a pinch of salt. Mix well to create a flavorful sauce.

Combine Noodles and Sauce: In a large mixing bowl, add the cooked udon noodles. Pour the chili oil mixture over the noodles and toss gently until thoroughly coated.

Garnish: Sprinkle the finely chopped green onions, sesame seeds, and optional julienned carrots over the noodles. Toss lightly again to combine.

Serve: Divide the noodles into serving bowls and garnish with fresh cilantro if desired. Enjoy your spicy udon noodles warm or at room temperature!
